  3. Prepare 1 tsp fried garlic.
  4. Prepare 1 tbsp sesame oil, 1 egg, and 1 tbsp cornstarch.
  5. Slice 2 stalks of spring onion.
  6. Prepare 1 tsp finely chopped ginger.
  7. Prepare 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp mushroom stock powder.
  8. Prepare 4 tbsp cooking oil and the dumpling wrappers.
  9. Heat the oil until it is really hot.
  10. Add the sliced spring onion and chopped ginger into the ground meat.
  11. Pour the hot oil over the spring onion and ginger so their aroma comes out.
  12. Mix until everything is combined.
  13. Add all the other ingredients except the cornstarch, then mix until evenly combined.
  14. Add the cornstarch, then mix until it is worked through all the ingredients.
  15. Take a dumpling wrapper, then put about 1 tsp of the meat mixture in the middle.
  16. Brush the whole edge of the wrapper with water.
  17. Fold the wrapper in half and press the edges together, shaping it however you like.
  18. Heat a pan, then add about 2 tbsp cooking oil and spread it over the whole surface of the pan.
  19. Place the potstickers in the pan.
  20. Pour about 40 ml of water into the pan.
  21. Cover the pan, then cook over medium heat for about three minutes until the water dries up leaving only the oil, and the bottoms of the wrappers turn golden.
  22. For the dipping sauce, prepare 2 tbsp chilli oil.
  23. Add 1 tbsp rice vinegar.
  24. Add 2 tbsp light soy sauce.
  25. Add 1 tsp sugar.
  26. Add 2 tbsp drinking water, then stir everything until the sugar dissolves, and serve it with the potstickers.
