Ou Kue, Pontianak Steamed Taro Cake

Ingredients

  1. Blend 3 cloves of garlic with a little vegetable oil, or chop them by hand with a knife.
  2. Blend 50 g preserved sweet radish with a little vegetable oil.
  3. Blend 100 g dried shrimp that has been washed, soaked in hot water and drained, with a little vegetable oil.
  4. Prepare a wok and saute the garlic until fragrant and golden, then take it out and set it aside in a bowl.
  5. In the same wok saute the sweet radish until fragrant, then take it out and set it aside in the same bowl.
  6. In the same wok saute the dried shrimp until browned.
  7. Take two heaped tablespoons of the sauteed shrimp and set them aside to mix into the taro batter later.
  8. Add the reserved sauteed garlic and sweet radish to the remaining shrimp and stir until evenly combined.
  9. Add half a tablespoon of sweet soy sauce, stir until combined, then take it off the heat and set it aside as the topping.
  10. Grate 500 g of peeled taro using the largest holes of a grater.
  11. Add the reserved sauteed shrimp, half of the 60 ml vegetable oil, 1/2 tsp mushroom bouillon, 1/2 tsp pepper and 1 tsp salt, then stir until evenly combined.
  12. In another bowl mix 100 g rice flour and 50 g tapioca starch, stir to combine, then pour in half the room temperature water and stir until there are no lumps of flour.
  13. Once the batter is smooth, strain it.
  14. Boil the remaining water, then pour it straight into the flour batter while stirring continuously.
  15. Add the rest of the vegetable oil.
  16. Pour the batter into a wok, turn the heat to low, then keep stirring slowly.
  17. Once the batter starts clumping on the spatula, turn off the heat and keep stirring until it thickens a little.
  18. Add the grated taro that was mixed with the seasoning and shrimp, then stir until evenly combined.
  19. Pour it into a pan greased with vegetable oil.
  20. Put it into a steamer with the water already boiling and steam for 30 to 45 minutes until cooked, adjusting for how thick the batter is.
  21. Once cooked let it cool before slicing, then serve it with the dried shrimp topping.
