Open offline saves

Ingredients

Steps

  1. Bring about 1 litre of water to a boil in a pot, then add 100 g of pearl sago.
  2. Cover the pot and boil for about 10 minutes, then turn off the heat and leave it for about 7 minutes until the pearl sago is completely translucent.
  3. Put 185 g of rice flour, 185 g of tapioca starch, and 250 g of granulated sugar into a bowl, then stir until evenly combined.
  4. Add 1/4 teaspoon of salt and 1,100 ml of medium-thick coconut milk, then stir until the batter is smooth, silky, and free of lumps.
  5. Divide the batter into three parts, two equal parts and one slightly smaller part because it will be mixed with the pearl sago.
  6. Strain the pearl sago, then rinse it with room temperature water so the cooking process stops.
  7. Mix the smaller portion of batter, about 400 ml, with the pearl sago.
  8. Mix another portion of batter with 200 g of jackfruit that has been cut into small pieces.
  9. Add 1/2 teaspoon of pandan paste to the last portion of batter, then stir until evenly combined.
  10. Grease the moulds thinly with cooking oil, then pour in the pearl sago batter up to one third of the mould.
  11. Steam for about 5 minutes over medium heat.
  12. Pour in the jackfruit batter up to two thirds of the mould, then steam for about 5 minutes more over medium heat.
  13. Pour in the pandan batter until the moulds are full, then continue steaming for about 15 minutes until the cakes are done.
  14. Leave the cakes until cold, then turn them out of the moulds and serve.
