Ingredients

Steps

  1. Put 200 g granulated sugar, 6 eggs, 1 tsp SP emulsifier and 1 tsp vanilla powder into a bowl.
  2. Beat at maximum speed for about 15 minutes until the batter is voluminous, thick and leaves a ribbon trail.
  3. Sift 200 g black glutinous rice flour and 50 g all-purpose flour into the batter.
  4. Mix briefly on the lowest speed until the batter and flour are evenly combined.
  5. Continue folding with a spatula from the bottom up to make sure the flour is fully incorporated.
  6. Add 2 tbsp instant coconut milk and 200 ml cooking oil.
  7. Fold the batter until evenly combined with no oil or liquid settled at the base of the bowl, otherwise the cake will be dense.
  8. Make a tin coating by mixing 1 tbsp margarine, 1 tbsp cooking oil and 1 tbsp flour until smooth, then brush it over a 24 cm tin.
  9. Pour the batter into the tin, level it with a spatula, then tap the tin a few times so trapped air can escape.
  10. Steam for about 35 minutes over medium-low heat in a steamer whose water is already boiling, and wrap the steamer lid in a clean cloth so condensation does not drip onto the batter.
  11. Test with a skewer; if no batter clings to it the cake is done, then lift it out of the steamer and turn it out of the tin.
  12. Cut the cake with a sharp knife so the texture stays neat, then serve.
