  1. Put 200 grams of granulated sugar with 1 1/2 tsp of cake emulsifier into a bowl, then crack in 6 eggs.
  2. Beat for 8 minutes from low speed up to high speed until the batter is fluffy and holds a ribbon.
  3. Add 15 grams of cocoa powder, 1/2 tsp of salt, plus 1/2 tsp of baking powder.
  4. Tip in half of the 300 grams of black glutinous rice flour, then beat on the lowest speed for only about 10 seconds.
  5. Tip in the rest of the black glutinous rice flour, then beat briefly again on the lowest speed so the batter does not deflate.
  6. Add one 65 ml pack of thick coconut milk, 40 grams of sweetened condensed milk, plus half of the 200 grams of melted margarine, then beat on low speed.
  7. Pour in the rest of the melted margarine, beating again on low speed until the batter is evenly combined.
  8. Fold the batter with a spatula, making sure no margarine has settled at the bottom.
  9. Grease the inside of the mold with margarine or cooking oil.
  10. Pour half of the batter into the mold, level it, then release trapped air with a skewer.
  11. Place it in a preheated steamer, then steam for 15 minutes over medium-low heat.
  12. For the filling, mix one pack of cheese spread with 5 tbsp of sweetened condensed milk until smooth, then transfer it to a piping bag.
  13. After 15 minutes, take the cake out of the steamer, cut a circle in the middle with a knife, then scoop the center out with a spoon.
  14. Pipe the cheese filling into the hollow in the middle of the cake.
  15. Pour all the remaining batter over the top, then smooth the surface with a spatula.
  16. Return it to the steamer, then steam for 25 minutes over medium-low heat.
  17. Once cooked, take the cake out of the steamer, then turn it out of the mold.
