Black Glutinous Rice Putu Ayu

  1. Lightly grease the moulds with cooking oil.
  2. Mix 100 g grated coconut with 1 tsp cornstarch and a pinch of salt until evenly combined.
  3. Put about 1 tbsp of grated coconut into each mould then press it down firmly.
  4. Sift 80 g black glutinous rice flour, 25 g wheat flour, and 1/4 tsp baking powder, then set aside.
  5. Mix 40 ml cooking oil with 1 packet of instant coconut milk, stir, then set aside.
  6. Put 1 egg, 80 g granulated sugar, 1/2 tsp emulsifier, 1/2 tsp vanilla powder, and a pinch of salt into a bowl.
  7. Beat at maximum speed for about three minutes until the batter is thick and holds a ribbon.
  8. Add the dry and wet ingredients alternately, mixing briefly at the lowest speed each time.
  9. Continue folding with a spatula until the batter is evenly combined and thick.
  10. Fill the moulds with the batter to the top.
  11. Steam over medium heat for about 20 minutes, lining the steamer lid with a clean cloth.
  12. After 20 minutes do a skewer test, if no batter sticks the cakes are done.
  13. Take the moulds out of the steamer then turn them over to release the cakes.
