Ingredients

Steps

  1. Grease a 20 x 20 cm divided tin thinly with margarine, including all of the dividers.
  2. Line the tin with baking paper, then set it aside.
  3. Prepare a bowl and add 3 eggs, 2 egg yolks, 100 g granulated sugar and 1 tsp emulsifier.
  4. Beat on maximum speed for about 7 to 10 minutes until the batter is risen, thick and holds a ribbon.
  5. Sift 90 g medium-protein wheat flour, 10 g cornstarch and 10 g milk powder into the batter.
  6. Stir briefly first so the flour does not fly about, then beat on the lowest speed for about 30 seconds until evenly combined.
  7. Continue folding with a spatula to make sure the flour and batter are fully combined.
  8. Add one sachet of instant coconut milk, 50 g melted margarine and 1 tsp pandan paste.
  9. Fold from the bottom up until evenly combined with no liquid settled at the bottom.
  10. Pour the batter into the lined tin, then tap it a few times so trapped air can escape.
  11. Fit the dividers into the tin and press them down gently, then scatter over chocolate sprinkles.
  12. Preheat the oven for about 10 minutes, place the tin on the lowest rack, then bake at 170 degrees Celsius with top and bottom heat for about 25 minutes.
  13. After 25 minutes, test with a skewer; if no batter clings to it, take the tin out of the oven.
  14. While it is still hot, lift the cake out of the tin and peel off the baking paper.
  15. Once the cake is just warm, remove the dividers from it.
