Ingredients

Steps

  1. For the tin coating, mix 1 tablespoon of margarine, 1 tablespoon of wheat flour, and 1 tablespoon of cooking oil, stir until evenly combined.
  2. Grease a 24 cm diameter tin with that coating mixture, then set it aside.
  3. In a bowl, add 6 eggs, 185 grams of granulated sugar, and one and a half teaspoons of emulsifier.
  4. Mix on maximum speed for about 10 minutes until the batter is risen, thick, and leaves a trail, then turn off the mixer.
  5. Sift 185 grams of medium protein wheat flour, 40 grams of milk powder, and 1/4 teaspoon of salt into the batter.
  6. Stir briefly with a spatula so the flour does not fly around.
  7. Mix again on the lowest speed for about 30 seconds until evenly combined.
  8. Carry on folding the batter with a spatula to make sure it is evenly combined.
  9. Add 125 grams of melted margarine that has cooled, 100 grams of instant coconut milk, and 1 teaspoon of pandan paste.
  10. Fold gently from the bottom upwards until evenly combined and no liquid is left settled at the bottom.
  11. Pour the batter into the tin, then level the surface with a spoon or spatula.
  12. Tap the tin a few times so the air trapped in the batter can escape.
  13. Preheat the oven for about 10 minutes before using it.
  14. Bake at 150 degrees Celsius top heat and 150 degrees bottom heat for about 50 minutes.
  15. Do a skewer test, if no batter sticks the cake is done, then take the tin out of the oven.
  16. Turn the cake out of the tin, let it rest until warm, then slice and serve.
