Ingredients

Steps

  1. In a mixing bowl combine 200 gr granulated sugar, 6 large eggs and 1 tsp emulsifier.
  2. Beat on maximum speed for about 10 minutes until the batter is risen, thick and holds a trail, then switch off the mixer.
  3. Sift 200 gr all-purpose flour, 25 gr cornstarch and 25 gr milk powder into the batter.
  4. Fold briefly so the flour does not fly about, then mix on the lowest speed just until combined.
  5. Continue folding the batter with a spatula to make sure it is thoroughly combined.
  6. In a separate bowl mix 115 gr melted margarine with 100 ml instant coconut milk and 1 tsp pandan paste, then stir until evenly combined.
  7. Pour the coconut milk and margarine mixture into the batter.
  8. Fold gently from the bottom up until evenly combined with no liquid settling at the base.
  9. Grease the tin, then pour the batter into it.
  10. Tap the tin down a few times to release trapped air, then smooth the batter with a skewer so the crumb stays fine.
  11. Scatter chocolate sprinkles over the batter, or use grated cheese instead.
  12. Sit the tin on top of a second tin so the cake does not form a crust.
  13. Bake in a preheated oven at 150 degrees Celsius with top and bottom heat for about 45 minutes or until the cake is cooked through.
  14. Test with a skewer; if no batter clings to it the cake is done, then take the tin out of the oven.
  15. Let it rest for about 5 minutes before turning the cake out of the tin so the surface does not peel away.
  16. Slice the cake and serve.
