Pandan Coconut Milk Sponge Cake

  1. Mix 100 g instant coconut milk, 50 g vegetable oil and 2 tbsp settled pandan extract until fully combined with no oil floating on top.
  2. Put 3 eggs, 125 g sugar and the cake emulsifier into a bowl.
  3. Beat on the highest speed for about 8 minutes until voluminous and at ribbon stage.
  4. Sift in 150 g low protein flour and 1/3 tsp salt, adding it in three batches.
  5. Stir briefly so the flour does not fly out, then mix on the lowest speed until just combined.
  6. Add the second batch of flour, stir briefly, then mix again on the lowest speed.
  7. Add the last of the flour and mix once more on the lowest speed; do not overmix.
  8. Scrape down the bowl and make sure no unmixed flour is left.
  9. Stir a little of the batter into the coconut milk mixture and mix quickly until smooth; this makes it much easier to combine.
  10. Pour the coconut milk mixture into the main batter and fold until evenly combined.
  11. Pour the batter into a 21 cm bundt tin that has been greased with butter and dusted with flour.
  12. Tap the tin down a few times to knock out air bubbles.
  13. Bake at 170 degrees Celsius with top and bottom heat for 30 minutes.
  14. After about 8 minutes, once the surface has set, take it out briefly and sprinkle over 10 g desiccated coconut.
  15. After 30 minutes, test with a skewer; if it comes out clean the cake is done.
  16. Turn the cake out of the tin while it is still hot.
