Ingredients

Topping:

Steps

  1. Grease a 20x20 cm tin thinly with margarine, including the dividers if you are using a divided tin.
  2. Line the tin with baking paper and set it aside.
  3. Blend 200 g fermented cassava, with the fibrous core removed, together with 40 g sweetened condensed milk and 1/2 tsp vanilla in a chopper, then set aside.
  4. Put 4 eggs, 2 egg yolks, 150 g granulated sugar, and 1 tsp emulsifier into a bowl.
  5. Beat at maximum speed for about 10 minutes until the batter is risen, thick, and ribbon-forming.
  6. Add the blended cassava, then mix on the lowest speed for about 20 seconds until evenly combined.
  7. Sift 150 g medium-protein wheat flour, 15 g cornstarch, and 25 g milk powder into the batter.
  8. Add 1/4 tsp salt, then stir briefly so the flour does not fly about.
  9. Mix on the lowest speed for about 30 seconds, then carry on folding with a spatula from the bottom up.
  10. Add 150 g melted margarine and 1 tsp pandan paste.
  11. Fold gently from the bottom up until no liquid is left settled at the bottom and the batter is still thick.
  12. Pour the batter into the tin and level it with a spoon or spatula.
  13. Tap the tin a few times to release the trapped air, then fit the tin dividers.
  14. Add grated cheese on top as desired.
  15. Preheat the oven for about 10 minutes, then bake on the bottom rack at 170 degrees Celsius with top and bottom heat for about 30 minutes until done.
  16. Do a skewer test, then take the tin out of the oven.
  17. While still hot, turn the cake out of the tin, then peel off the baking paper and remove the dividers.
  18. Let the cake cool completely, then serve.
