Ingredients

Topping:

Steps

  1. Mix 1 tablespoon of margarine, 1 tablespoon of cooking oil, and 1 tablespoon of flour until evenly combined to make the tin coating.
  2. Grease the tin with the coating you have just made.
  3. Put 250 gr of cassava tape with the center fiber removed into a chopper, add 50 gr of sweetened condensed milk, then blend until smooth and evenly combined.
  4. Prepare a bowl and add 5 eggs, 2 egg yolks, 200 gr of granulated sugar, and 1 1/2 teaspoons of emulsifier.
  5. Beat the batter on maximum speed for about 10 minutes until pale, risen, thick, and holding a ribbon trail, then turn off the mixer.
  6. Add the blended tape mixture, then beat on the lowest speed until evenly combined.
  7. Add 200 gr of all-purpose flour and 35 gr of milk powder, sifting them in.
  8. Stir briefly with a spatula so the flour does not fly around, then beat on the lowest speed just until combined.
  9. Continue folding the batter with a spatula to make sure it is evenly combined.
  10. Add 1 teaspoon of vanilla and 200 gr of melted margarine that has cooled down or is at least only warm.
  11. Fold gently from the bottom upwards until evenly mixed with no pool of melted margarine left at the bottom.
  12. Lay sliced almonds on the base of the tin, then sprinkle over grated cheese to taste.
  13. Pour the batter into the tin, level it with a spoon or spatula, then tap the tin a few times to release the trapped air.
  14. Bake in a preheated oven at 150 degrees Celsius using both top and bottom heat for about 50 minutes until the cake is done.
  15. Test the cake with a skewer, and once no batter sticks to it, take the tin out of the oven.
  16. Let it rest until the cake is just warm, turn it out of the tin, then slice and serve.
