Ingredients

Steps

  1. Put 5 eggs, 175 g granulated sugar, 1/2 tsp vanilla powder and 1 tsp emulsifier into a bowl.
  2. Beat at maximum speed for about 10 to 12 minutes until the batter is pale, voluminous, thick and leaves a ribbon trail.
  3. Add 175 g all-purpose flour and 250 g mashed fermented cassava with the central fibre removed, adding them gradually and alternately while folding.
  4. Fold with a spatula, or mix on the lowest speed, until the batter is fully combined.
  5. Add 1 packet of instant coconut milk, then stir again until evenly combined.
  6. Add 125 g melted margarine, then fold from the bottom up until evenly combined with no liquid settled at the base of the bowl.
  7. Grease a 24 cm round tin thinly with margarine, dust it thinly with flour and tap the tin to spread it.
  8. Pour the batter into the tin, then tap the tin a few times so trapped air can escape.
  9. Scatter grated cheese over the top to taste, or add raisins and sliced almonds if you like.
  10. Bake in a preheated oven at 180 degrees Celsius with top and bottom heat for 45 minutes.
  11. After 45 minutes, test the cake with a skewer; if no batter clings to it and the colour is golden brown it is done.
  12. Take the cake out of the oven and turn it out of the tin carefully since it is still very hot.
  13. Once the cake is just warm, cut it with a sharp knife and serve.
