Ingredients

Topping:

Steps

  1. Put 150 gr of fermented cassava, with the fibrous core removed, into the chopper.
  2. Add 30 gr of sweetened condensed milk and 1/2 tsp of vanilla.
  3. Process until smooth and evenly combined.
  4. For the tin coating, mix 1 tbsp of wheat flour, 1 tbsp of cooking oil, and 1 tbsp of margarine until evenly combined.
  5. Brush a 20 cm diameter tin with the coating then set it aside.
  6. Prepare a bowl and add 120 gr of granulated sugar, 3 eggs, and 1 egg yolk.
  7. Add 1 tsp of emulsifier.
  8. Beat at maximum speed for about 10 minutes until the batter is pale, risen, thick, and holds a trail.
  9. Once the mixer trail no longer sinks quickly, turn off the mixer.
  10. Add the blended fermented cassava.
  11. Mix for about 20 seconds more on the lowest speed until evenly combined.
  12. Add 125 gr of medium-protein wheat flour and 20 gr of milk powder, sifting them to make sure there are no lumps.
  13. Fold the batter briefly so the flour does not fly about, then mix for about 20 seconds on the lowest speed until evenly combined.
  14. Continue folding with a spatula to make sure the batter is evenly combined.
  15. Add 120 gr of melted margarine.
  16. Fold gently from the bottom up so the batter stays thick, and make sure no margarine has settled at the bottom or the cake will turn out dense.
  17. Pour the batter into the tin.
  18. Smooth the batter with a spoon or spatula.
  19. Tap the tin a few times so trapped air can escape.
  20. Add grated cheese and sliced almonds on top, or raisins if you prefer.
  21. Preheat the oven for about 10 minutes.
  22. Bake at 150 degrees Celsius with top and bottom heat for about 40 minutes or until the cake is done.
  23. After about 40 minutes of baking, do a skewer test; if no batter sticks to it, the cake is done.
  24. Take the tin out of the oven, and while it is still hot the cake can be turned out straight away.
  25. Slice the cake and it is ready to serve.
