Ingredients

Coating Ingredients:

Steps

  1. Peel 1 pineapple, remove the eyes, wash it clean, then cut it into small pieces.
  2. Blend the pineapple with 200 ml water until smooth, then measure out 1 liter of the juice.
  3. Put 1 liter of pineapple juice and 300 g granulated sugar into a bowl, then stir until the sugar dissolves.
  4. Add 300 g tapioca starch and 1 tsp salt, then stir until the batter is smooth, silky, and free of lumps.
  5. Strain the batter if any flour lumps remain.
  6. Add 110 g corn vermicelli that has been soaked until swollen and snipped into short pieces.
  7. Add 10 drops of yellow food coloring, then stir until evenly combined.
  8. Grease putu ayu moulds thinly with cooking oil.
  9. Stir the batter again, then pour it into the moulds almost to the top.
  10. Steam for about 20 minutes on medium heat over already boiling water, with the steamer lid wrapped in a clean cloth.
  11. Open the steamer lid, lift the moulds out, then carry on steaming the remaining batter until it is all cooked.
  12. Let the cakes cool completely before turning them out of the moulds.
  13. For the coating, mix 200 g grated coconut, white part only, with 1/2 tsp salt, then steam it for about 10 minutes so it does not spoil quickly.
  14. Ease the cakes out of the moulds with a skewer, then roll them in the steamed grated coconut.
  15. Chill the cakes in the refrigerator for about 1 hour before serving.
