Ingredients

Coating ingredients:

Steps

  1. Prepare a pot and add 350 gr of shaved palm sugar, 1 1/2 tbsp of granulated sugar, 400 ml of water, and 2 pandan leaves.
  2. Cook over medium heat until the sugar dissolves, stirring occasionally so the bottom does not scorch.
  3. Once it boils and the sugar has dissolved, turn off the heat.
  4. Strain the palm sugar syrup to separate it from the dregs, then let it cool or at least come down to warm.
  5. Prepare a bowl and add 375 gr of tapioca flour and 1/2 tsp of salt.
  6. Add the cooled palm sugar syrup, 1/4 tsp of vanilla powder, and 500 ml of medium-thick coconut milk.
  7. Stir until evenly combined so the batter is smooth, silky, and free of lumps.
  8. Add 2 tbsp of cooking oil then keep stirring until evenly combined.
  9. If you still feel any lumps in the batter, strain it.
  10. Heat the steamer until the water boils, then put a 20 cm tin into the steamer.
  11. Divide the batter into three parts, pour one third into the tin, then steam for about 10 minutes over medium heat.
  12. After 10 minutes of steaming, pour in another third of the batter then steam for another 10 minutes.
  13. Pour in the remaining batter then steam for about 20 minutes or until the cake is cooked and the surface is set and no longer watery.
  14. Line the steamer lid with a clean cloth so condensation does not drip onto the batter.
  15. After 20 minutes, when the cake is cooked, lift the tin out of the steamer.
  16. Let the cake cool completely so it is firm and does not fall apart.
  17. For the coating, prepare 150 gr of grated coconut using only the white part, add 1/4 tsp of salt, and stir until evenly combined.
  18. Add 1 pandan leaf then steam for about 5 to 10 minutes so the grated coconut does not spoil quickly.
  19. Once the cake is cold, run a knife around the edge of the tin then turn the cake out.
  20. Cut the cake to the size you like using a knife covered with plastic so the pieces do not stick and are easy to cut.
  21. Roll the pieces in the grated coconut then serve.
