Ingredients

Coating Ingredients:

Steps

  1. Peel and wash the pumpkin, then steam 350 gr of it over medium heat for about 15 minutes until it is tender and easy to pierce.
  2. Take the pumpkin out and drain it, then mash it while it is still hot.
  3. In a bowl, add 250 gr of tapioca starch, 175 gr of granulated sugar, half a teaspoon of salt, a quarter teaspoon of vanilla powder, 100 ml of instant coconut milk, and 275 ml of water.
  4. Stir until the batter is smooth, silky, and free of lumps.
  5. Add the mashed pumpkin and 2 tablespoons of cooking oil, then keep stirring until well combined.
  6. Strain the batter so the cake comes out with a fine texture, then stir it again until even.
  7. Grease the moulds thinly with cooking oil, put them into a steamer with boiling water, then pour in the batter until the moulds are almost full.
  8. Steam over medium heat for about 30 minutes until the cakes are cooked, and line a flat steamer lid with a clean cloth so condensation does not drip onto the batter.
  9. Take the cakes out of the steamer, then let them cool before turning them out of the moulds.
  10. For the coating, mix 200 gr of grated half-mature coconut, white part only, with half a teaspoon of salt and 1 pandan leaf.
  11. Steam the grated coconut for about 5 minutes so it does not spoil quickly.
  12. Once the cakes are cool, turn them out of the moulds, roll them in the grated coconut, then serve.
