Steps

  1. In a pot put 375 g palm sugar, 2 pandan leaves, 400 ml water, and 2 tbsp granulated sugar.
  2. Turn the stove on to medium heat, then cook until the sugar dissolves and boils.
  3. Once the sugar has dissolved and boiled, turn off the stove then strain the palm sugar syrup.
  4. In a bowl put 375 g tapioca starch, 1/2 tsp salt, 1/4 tsp vanilla powder, and 500 ml medium thickness coconut milk, then stir until the batter is smooth, silky, and free of lumps.
  5. Add the palm sugar syrup while it is still warm, then keep stirring the batter until evenly combined.
  6. Add 2 tbsp cooking oil, then stir until evenly combined, strain the batter if there are still lumps, then set it aside.
  7. Cut 10 pandan leaves into small pieces, add 250 ml water, then blend until smooth.
  8. Strain the pandan juice.
  9. In a bowl put 375 g tapioca starch, 250 g granulated sugar, 1/2 tsp salt, 1/4 tsp vanilla powder, 200 ml water, and 500 ml medium thickness coconut milk, then stir until the batter is smooth, silky, and free of lumps.
  10. Add the blended pandan juice and 1 tsp pandan paste, then keep stirring the batter until evenly combined.
  11. Add 2 tbsp cooking oil, then keep stirring the batter until evenly combined.
  12. Put a tin that has been greased with cooking oil into a steamer whose water is already boiling, then pour in half of the palm sugar batter.
  13. Steam for about 15 minutes over medium heat.
  14. After about 15 minutes of steaming, pour in the rest of the palm sugar batter, then steam for about 15 more minutes, lining the steamer lid with a clean cloth if the lid is flat.
  15. After about 15 minutes of steaming, once the surface has set, stir the green batter first then pour in half of it.
  16. Keep steaming for about 10 to 15 minutes.
  17. Pour in the last of the green batter, then steam for about 30 to 40 minutes until the cake is cooked.
  18. After about 40 minutes of steaming, once the surface has set, take the tin out of the steamer.
  19. Leave the cake until it is completely cold, about 4 hours, before turning it out of the tin.
  20. For the coating, take 200 g grated coconut, using only the white part, add 1/2 tsp salt, then stir until evenly combined.
  21. Add 1 pandan leaf, then steam it for about 5 minutes so the coconut does not spoil quickly.
  22. After about 4 hours of resting, run a knife around the edge of the cake then turn it out of the tin.
  23. Cut the cake to whatever size you like.
  24. Roll the pieces in the grated coconut, then serve.
