Ingredients

Coating ingredients:

Steps

  1. Put 275 g palm sugar chopped small and 250 ml water into a pot, then cook until the sugar dissolves and the water boils.
  2. Turn off the heat, strain the palm sugar syrup to remove the sediment, then let it cool.
  3. Prepare 500 g of peeled cassava, remove the fibrous core, wash it clean, then drain.
  4. Steam the cassava for about 15 minutes over already boiling water until soft, then check it with a skewer.
  5. Lift the cassava out of the steamer.
  6. Put the cassava into a chopper while it is still hot, then grind it smooth.
  7. Mix in the palm sugar syrup to cool the cassava down, then process again until evenly combined.
  8. Add 275 g tapioca starch, 1/2 tsp salt, 1/4 tsp vanilla powder, and 500 ml medium-thick coconut milk, then stir until evenly combined.
  9. Strain the batter so the cake comes out smooth and soft, then stir again until evenly combined.
  10. Grease a 20x20 cm tin thinly with cooking oil, then pour the batter in.
  11. Tap the tin a few times so the air trapped in the batter can escape.
  12. Steam for about 40 minutes on medium heat over already boiling water, with the steamer lid wrapped in a clean cloth.
  13. Once the surface of the cake is dry, lift the tin out of the steamer, then let it cool completely.
  14. Mix 200 g grated coconut, white part only, with 1/2 tsp salt and 1 pandan leaf, then steam for about 5 minutes so it does not spoil quickly.
  15. Take the coconut out and let it cool before using.
  16. Once the cake is cool, run a knife around the edge of the tin, then turn the cake out.
  17. Slice the cake with a knife wrapped in plastic so it does not stick.
  18. Roll the pieces in the grated coconut and serve.
