Ingredients

Topping Ingredients:

Steps

  1. Finely shave 150 gr palm sugar. Besides palm sugar you can also use granulated sugar.
  2. Peel 500 gr cassava and wash it clean, then coarsely shred the cassava. If you have no food processor you can shred it with a hand grater.
  3. Transfer the shredded cassava to another bowl.
  4. Add 1/2 tsp salt and the shaved palm sugar, then stir until evenly combined.
  5. Remove the woody core from the cassava.
  6. Once evenly combined, add 2 pandan leaves. The cassava is ready to steam.
  7. Prepare 200 gr grated coconut from half a coconut, using only the white part, sprinkle it with 1/2 tsp salt, then stir until evenly combined.
  8. Tuck 1 pandan leaf into the grated coconut.
  9. Heat the steamer until the water boils, line the steamer tray with banana leaf, then add the grated coconut and the cassava mixed with palm sugar.
  10. Steam the grated coconut for only about 10 minutes so it does not spoil quickly, and steam the cassava for about 30 minutes over medium heat until soft.
  11. If you use a flat steamer lid, line the lid with a clean cloth or towel so condensation does not drip onto the cassava.
  12. After 10 minutes, take the grated coconut out of the steamer, then keep steaming the cassava for another 20 minutes until soft.
  13. After 30 minutes of steaming, open the lid. Once the palm sugar has melted and the cassava is soft, turn off the heat, then lift the cassava out of the steamer.
  14. Serve the cassava sawut topped with the steamed grated coconut.
