Savoury Rice Flour and Coconut Crackers

Open offline saves

Ingredients

Steps

  1. Put 150 g rice flour and 75 g grated coconut into a steaming tin, then stir until evenly combined.
  2. Steam for 25 minutes in a steamer whose water is already boiling, and wrap the steamer lid in a clean cloth so condensation does not drip onto the mixture.
  3. While it steams, grind 1 tsp coriander seed, 2 garlic cloves and 2 candlenuts to a paste.
  4. After 25 minutes, take the tin out of the steamer and tip the mixture into a bowl.
  5. Add 75 g tapioca starch, the ground spice paste, 1/2 tsp stock powder, 1/2 tsp salt and 30 g melted margarine.
  6. Pour in 120 ml hot water gradually while stirring until the dough is evenly combined.
  7. Once the dough is only warm, knead it until smooth and shapeable; if it is still too dry, add a little hot water one tablespoon at a time.
  8. Take a small piece of dough and roll it into a ball; if it rolls smoothly and holds its shape, the dough is ready.
  9. Place the balls on a sheet of plastic, spaced apart, cover them with more plastic, then flatten them thin by pressing with the base of a glass.
  10. You can also roll the dough out thin with a rolling pin or a glass bottle and cut it with a bottle cap.
  11. Heat oil in a pan over medium heat until it is properly hot so the crackers puff up instead of staying dense.
  12. Add the shaped pieces, then fry, turning them, until they cook evenly and turn slightly golden.
  13. Lift them out of the oil and drain off the excess, then fry the remaining dough until it is all done.
  14. Store in an airtight container so they stay crisp; they keep for up to 1 month.
