Ingredients

For dusting:

Steps

  1. Put the wheat flour, tapioca flour, salt, ground pepper, and stock powder into a bowl, then stir until evenly combined and set aside.
  2. Put the water and the crushed garlic into a pot, then cook over medium heat until it boils and turn off the heat.
  3. Pour the hot liquid into the flour mixture a little at a time, pushing the moistened flour to the side of the bowl, then pour again onto the flour that is still dry.
  4. Stir until evenly combined, then leave it a moment until the dough is warm rather than hot.
  5. Knead the dough while dusting it with tapioca flour a little at a time until you get a soft dough that can be shaped.
  6. Stop adding flour once the texture is soft and slightly tacky like meatball mixture, because if it is too firm the cimol will turn out hard.
  7. Have cool oil ready in a pan, dip a measuring spoon in the oil, then rub both hands with a thin film of cooking oil.
  8. Scoop out a little dough with the measuring spoon, roll it into a smooth ball, then drop it into the cool oil; repeat until all the dough is shaped.
  9. Turn the heat to low, then fry the cimol until they start to puff, stirring occasionally so they do not stick together.
  10. Once all the cimol have puffed up, raise the heat a little then carry on frying until they are cooked and firm.
  11. Poke one with a skewer to check; if it dents it is not done yet, and once it is firm and lightly golden it is cooked.
  12. Lift the cimol out of the oil, drain off the excess, then fry the remaining dough.
  13. Dust the cimol with chilli powder, balado powder, or cheese powder to taste.
