Ingredients

Steps

  1. Put 400 ml water, 1/2 tsp stock powder, 1/4 tsp ground pepper, 1/2 tsp salt and 2 garlic cloves ground to a paste into a pan, then cook over medium heat until it boils.
  2. Once the water boils turn off the heat, add 200 g all-purpose flour, then stir quickly until the flour and water are evenly combined.
  3. Transfer the dough to another bowl and let it stand until the steam has gone and it is only warm.
  4. Add 200 g tapioca starch, then knead the dough until evenly combined, smooth and shapeable.
  5. Roll the dough out to about 1 to 2 cm thick, then cut it into small squares.
  6. Bring water to a boil in a pot over medium heat, then add 1 tbsp cooking oil and stir it in.
  7. Once the water boils, add the cut pieces and boil until they float to the surface; do not boil too long or they will be too soft.
  8. Once they float, turn off the heat, then lift them out and drain until the water has run off.
  9. Heat a little cooking oil in a pan, add the drained pieces, then stir-fry briefly until the outsides dry slightly.
  10. Beat 2 eggs with 1/4 tsp salt, pour them into the pan, then stir-fry as if making scrambled eggs until the egg is cooked and evenly distributed.
  11. Add 1 tbsp chilli sauce and 1 tsp sweet soy sauce, then cook until the sauces are evenly mixed in.
  12. Add chilli powder to taste and 1 finely sliced spring onion, then stir-fry briefly until evenly combined.
  13. Turn off the heat, then serve the cilor while warm.
