Ingredients

Wrapper Ingredients:

Steps

  1. Mix 225 g wheat flour, 25 g tapioca starch, and 1/2 tsp salt in a bowl, then stir until evenly combined.
  2. Pour in 150 ml hot water a little at a time while stirring until evenly combined.
  3. Knead the dough by hand until smooth, then shape it into a ball.
  4. Put the dough into a plastic bag or an airtight container, then let it rest for about 60 minutes so it relaxes.
  5. For the filling, put 500 g chicken that has been washed and cut small into a chopper, then add 3 eggs and 10 cloves of grated garlic.
  6. Add 1/2 tsp stock powder, 1/2 tsp ground pepper, 1 tbsp granulated sugar, 2 tsp salt, 1 tbsp sesame oil, and 125 g tapioca starch.
  7. Run the chopper until the chicken is finely ground and everything is evenly combined.
  8. Add 4 finely sliced spring onions, then stir until evenly combined.
  9. Take the wrapper dough out of the bag, knead it briefly, round it, then divide it into two portions.
  10. Dust the work surface with a little tapioca starch, then roll the dough out thin.
  11. Dust the sheet with a little tapioca starch, then cut out rounds using a cup lid or a bowl.
  12. Dust the cut wrappers with a little tapioca starch so they do not stick to each other.
  13. Store the wrappers in an airtight container; they keep 3 to 4 days in the fridge or up to 1 month in the freezer.
  14. Take one wrapper and put in enough chicken filling, not too full so it does not spread when folded.
  15. Brush the edge of the wrapper with a little water, then bring the two sides together.
  16. Pleat and press tightly on the right side and then on the left side, and repeat until all the filling is wrapped.
  17. Grease a steaming tray with cooking oil, then arrange the gyoza on it.
  18. Steam over already boiling water for about 20 minutes on medium heat, with the steamer lid wrapped in a clean cloth.
  19. Open the steamer lid, then lift out the cooked gyoza.
  20. Heat a little oil in a frying pan, add the gyoza, then fry until the bottoms are golden brown.
  21. Lift the gyoza out of the pan and serve with the sauce.
