  1. Make the sauce first: mix the seasoned chili flakes, chopped garlic, and a little sesame oil and ginger (for aroma, to be discarded later), then heat oil and pour it over the chili mixture, stir well, set aside.
  2. Finely chop the chicken thigh using a food processor.
  3. Mix the chopped chicken with sesame oil, chopped garlic, scallion, finely chopped onion, light soy sauce, a little chicken bouillon, and grated ginger, stir well.
  4. Taste the filling by cooking a small bit of the mixture in a pan, adjust seasoning as needed.
  5. Fill the gyoza wrappers with the mixture (not too much), fold and seal the edges with a little water so they don't leak.
  6. Heat the waffle maker, arrange the gyoza on it with space between them so they don't stick, then close and cook.
  7. Since the chicken already contains enough moisture, there's no need to add water for steaming, just brush with a little oil for a crispy result.
  8. Once cooked and the surface is crispy, remove the gyoza from the waffle maker.
  9. Serve the waffled gyoza with the chili oil sauce made earlier, either as a dip or drizzled on top to taste.
