  1. Soak 100 g of soybeans overnight, remove the skins, then put them into a pot of pork or chicken stock.
  2. Simmer over low heat for about 30 minutes until the beans are tender.
  3. Put 500 g of pork and 300 g of mackerel fillet into the meat chopper.
  4. Add 1 egg and about half a cup of ice.
  5. Add 2 tbsp of fried garlic oil, 1 tsp of sesame oil, half a teaspoon of white pepper and one and a half teaspoons of salt.
  6. Blend until the mixture is smooth.
  7. Add 100 g of tapioca starch and blend again until evenly combined.
  8. Cut 2 large blocks of tofu into 4 triangles each, scoop out the centre, then fill them with the meat mixture using a spoon.
  9. Halve 5 large red chilies and 2 large green chilies and remove the seeds.
  10. Fill the chilies with the same mixture.
  11. Cut half a sheet of beancurd skin into two pieces.
  12. Put enough filling onto the beancurd skin, then wet the edge so it sticks.
  13. Roll it up and trim off the excess skin with a kitchen knife.
  14. Fill the remaining vegetables with the meat mixture and spread it evenly.
  15. Heat a wok with frying oil.
  16. Fry the stuffed beancurd rolls, 4 of the stuffed tofu and the stuffed red chilies until cooked and golden.
  17. Roll the leftover mixture into meatballs.
  18. Drop the meatballs into the stock and cook until done.
  19. Add the 4 remaining stuffed tofu.
  20. Season the broth with salt, pepper and mushroom bouillon.
  21. Add the stuffed beancurd rolls and the vegetables.
  22. Serve in a bowl with fried garlic and scallion sprinkled on top.
