Fish Ball Soup

  1. For the stock, briefly boil 250 g of pork ribs, which can also be swapped for chicken.
  2. Throw away that first batch of water, replace it with about two and a half litres of fresh water, and cook for 1 hour over low heat.
  3. Prepare 500 g of ground Spanish mackerel, add 1 cold egg white, then pour in 150 ml of iced water in two stages while mixing constantly.
  4. Add 1 tsp salt, 2 tsp sugar, 1/2 tsp ground white pepper, and 1 tsp mushroom stock powder.
  5. Add 35 g of tapioca starch, then mix until the paste comes together.
  6. Split open the middle of about 8 pieces of fried tofu, then stuff them with the fish paste.
  7. For the fish balls, bring about 500 ml of water to a boil.
  8. Roll the fish paste into balls with your hand.
  9. Dip the spoon in a little water so the paste does not stick, then drop the balls into the pot of hot water.
  10. Cook the fish balls until done.
  11. Once cooked, lift them out and move them into a bowl of iced water.
  12. Boil the stuffed tofu briefly as well, just until the fish paste is cooked.
  13. For the pukian rolls, move the fish paste into a piping bag and pipe it onto a sheet of beancurd skin.
  14. Roll up the beancurd skin until it wraps around the fish paste.
  15. Seal the end with a little leftover paste or with beaten egg.
  16. Trim off the excess beancurd skin.
  17. Heat plenty of oil, then cut the roll with scissors while dropping the pieces straight into the hot oil.
  18. Fry the pukian until golden brown.
  19. Season the stock with 1 1/2 tsp salt, 1/2 tsp ground white pepper, 1 tsp mushroom stock powder, and 2 tsp sugar, then turn off the heat.
  20. For a small portion, take a little of the stock and bring it back to a boil.
  21. Add as many fish balls, stuffed tofu, and fried pukian as you want, or put them all in at once if you want a big batch.
  22. Cook for 2 minutes, then add the mustard greens or pak choy.
  23. Add bean sprouts and cook only briefly so they stay crunchy, then turn off the heat.
  24. Serve topped with sliced spring onion and fried shallots.
