Ingredients

Sweet, sour and hot sauce:

Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Prepare 500 g of ground mackerel that is still fresh, which you can tell because the flesh feels springy rather than watery.
  2. Add 1 egg white, and preferably use a cold one.
  3. Add 150 g of iced water in stages, mixing it into the fish paste each time you add some.
  4. Add 1 tsp salt, 1 tsp sugar, 1/2 tsp ground white pepper, and 1 tsp mushroom stock powder.
  5. Mix for about 2 to 3 minutes so the paste turns springy again.
  6. Add 50 g of tapioca starch, then mix again until even.
  7. Slap the mixture against the bottom of the bowl so the texture becomes dense and springy.
  8. Prepare a sheet of beancurd skin and choose a good brand so the skin does not tear and is easy to roll.
  9. Cut the skin into 24 pieces, or make them smaller if you prefer.
  10. Wipe off any salt residue on the skin so the finished rolls are not too salty.
  11. Transfer the fish paste into a plastic bag or a piping bag so it is easy to pipe onto the beancurd skin.
  12. Prepare 1 beaten egg to use as the glue.
  13. Pipe the paste onto the cut pieces of beancurd skin.
  14. Brush the edges of the beancurd skin with the beaten egg.
  15. Roll the skin up, then press the edges so the filling does not escape.
  16. Heat a frying pan, then pour in a generous amount of vegetable oil.
  17. Once the oil is hot, add the fish rolls and fry until cooked and golden.
  18. The cooked rolls will puff up a little, which is normal, so lift them out and drain them.
  19. Keep frying the rest of the fish rolls until they are all done.
  20. For the sauce, blend 5 red curly chillies and 2 cloves of garlic with about 3 tbsp of water.
  21. Move the blended paste into a pot, then add 300 ml of water.
  22. Add 1 1/2 tbsp sugar.
  23. Add 1/3 tsp salt.
  24. Add 1 tsp vinegar or 1 1/2 tbsp lime juice.
  25. Add 2 tbsp bottled chilli sauce.
  26. Turn on the heat, then cook over low heat for about 10 minutes.
  27. Once the sauce starts bubbling, thicken it with a mixture of 2 tsp cornstarch and 2 tbsp water, then stir and cook again until it boils.
  28. Once the consistency is right, turn off the heat and let the sauce cool.
  29. Cut the fish rolls into small pieces so they are easy to eat.
  30. Serve them with the sweet, sour, and spicy sauce.
