Long-Lasting Spicy Shallot Sambal

Open offline saves

Ingredients

Steps

  1. Coarsely chop 100 g of shallots and 65 g of red bird's eye chillies in a food processor; do not let them go smooth.
  2. Heat 125 ml of cooking oil, then saute 5 bruised, unpeeled cloves of garlic until their aroma comes out.
  3. Once the aroma comes out, lift the garlic out and set it aside, since only its aroma is wanted.
  4. Lower the heat, then add the chopped chillies and shallots.
  5. Add the shrimp paste, then saute over low heat until cooked.
  6. Add 1 teaspoon of salt, 1 teaspoon of granulated sugar, and half a teaspoon of powdered stock, then stir until evenly combined.
  7. Add 50 ml of water so the seasoning really soaks in, then cook until all the water has evaporated.
  8. Once the shallots are translucent and cooked, turn off the heat and the sambal is ready to serve.
