Steps

  1. For the coconut filling, put 225 gr palm sugar, 2 tbsp granulated sugar, 2 pandan leaves, 1/2 tsp salt, and 150 ml water into a wok.
  2. Cook over medium heat, stirring occasionally, until the sugar dissolves.
  3. Strain the palm sugar syrup to separate it from the dregs, then pour it back into the wok along with the pandan leaves.
  4. Add 300 gr grated coconut, then cook over medium heat, stirring constantly, until the syrup soaks in and the filling starts to dry out.
  5. Turn off the stove, then let the coconut filling cool.
  6. Boil 100 gr potato for about 10 minutes until soft, then lift it out and mash it.
  7. For the dough, put 300 gr white glutinous rice flour and 1/2 tsp salt into a bowl, then add the mashed potato.
  8. Pour in 270 ml medium-thick coconut milk little by little and add 1 tsp pandan paste, then stir until evenly combined.
  9. Knead the dough by hand until it is smooth and can be rolled into balls.
  10. Roll the coconut filling into balls using a measuring teaspoon, each ball weighing about 11 gr.
  11. Grease your hands with a little cooking oil so the dough does not turn dense and hard when steamed.
  12. Take about 1 measuring tablespoon of the dough, flatten it, place a ball of coconut filling in the centre, then wrap and roll it until round and smooth.
  13. Arrange the balls spaced apart in a steamer lined with banana leaf brushed with cooking oil so they do not stick while steaming.
  14. Steam for about 15 minutes over medium heat above already boiling water, and line the steamer lid with a clean cloth so condensation does not drip onto the dough.
  15. Lift the cakes off the pot, then let them stand until just warm.
  16. For the coconut sauce, put 20 gr rice flour, 1 tsp salt, 1 tsp granulated sugar, and 700 ml medium-thick coconut milk into a pot, then stir until evenly combined.
  17. Add 2 pandan leaves, then cook over medium heat, stirring constantly, until it boils and thickens.
  18. Turn off the stove, then let it stand until the coconut sauce is cool.
  19. Arrange the cakes in bowls or cups, then pour the cooled coconut sauce over them.
