Coconut Sauce Ingredients:

Steps

  1. Put 100 ml water, 1 pandan leaf, 150 g granulated sugar, and 1/2 tsp salt into a wok, then cook over medium heat until it boils and the sugar dissolves.
  2. Add 200 g grated coconut, white part only, then cook, stirring constantly, until the liquid reduces and soaks into the coconut.
  3. For the dough, put 1 tbsp granulated sugar, 1 pandan leaf, 1/4 tsp salt, and 280 ml medium-thick coconut milk into a pot, then stir until evenly combined.
  4. Cook the coconut milk over medium heat, stirring constantly, until it boils and bubbles up, then turn off the heat and let it cool to warm.
  5. Steam 250 g purple sweet potato, peeled and cut small, for about 10 to 15 minutes until soft.
  6. While still hot, mash the sweet potato until completely smooth.
  7. Add 250 g white glutinous rice flour and the warm coconut milk, then stir until evenly combined.
  8. Knead the dough by hand until it comes together and can be shaped, adding a little more coconut milk if it is still too dry.
  9. Take about 18 g of dough, roll it into a ball, then flatten it, but not too thin so it does not split.
  10. Fill it with some of the sweet coconut, then roll it back into a smooth ball.
  11. Place the balls spaced apart in a tray greased with cooking oil, and carry on until all the dough has been filled.
  12. Steam for 20 minutes on medium heat over already boiling water, with the steamer lid wrapped in a clean cloth.
  13. Lift the tray out of the steamer, then let the cakes cool.
  14. For the coconut sauce, put 45 g rice flour, 15 g cornstarch, 1/2 tsp salt, and part of the 600 ml coconut milk into a pot, stir until even, then pour in the rest of the coconut milk.
  15. Add 2 pandan leaves, then cook over medium-low heat, stirring constantly, until it boils and thickens.
  16. Turn off the heat and let it stand a moment until the steam subsides.
  17. Arrange the cakes in the middle of a plastic wrapper, then pipe over enough coconut sauce without covering the cakes completely.
  18. Neaten and seal the plastic, then repeat until all the cakes are wrapped.
