Putri Mandi, Glutinous Rice Balls with Coconut Sauce

  1. Thinly slice the palm sugar and put it in a pan.
  2. Add the grated coconut, the salt and a pandan leaf.
  3. Cook over low heat while stirring constantly until the liquid evaporates and the filling is dry but still moist.
  4. Spread the coconut filling on a plate and leave it until completely cool.
  5. Heat the liquid coconut milk with the salt, pandan paste and a pandan leaf over low heat until hot but not boiling, then turn off the heat.
  6. Mix the rice flour and glutinous rice flour together in a bowl.
  7. Pour the hot coconut milk into the flour and stir until it comes together into a dough.
  8. Knead the dough by hand until it is smooth and does not crack. If it feels dry, add a little more coconut milk.
  9. Weigh the dough into portions of about 20 g, roll them into balls and cover with a cloth so they do not dry out.
  10. Flatten each ball, fill it with coconut filling, seal it tightly so no air is trapped inside, then roll it back into a ball.
  11. Brush a steamer tray with oil and arrange the balls with space between them.
  12. Wrap the steamer lid with a cloth, then steam over medium low heat for 15 minutes.
  13. For the sauce, put the instant coconut milk and water in a pan, season with salt, and cook over low heat until hot.
  14. Stir in about 1 tbsp of cornstarch and water slurry and cook until the sauce thickens to your liking, then turn off the heat.
  15. Serve the putri mandi with the warm coconut sauce poured over the top.
