Ingredients

Coconut Filling:

Dough:

Coconut Sauce:

Steps

  1. For the coconut filling, put 225 g shredded palm sugar, 2 tbsp granulated sugar, 2 pandan leaves, 1/2 tsp salt, and 150 ml water into a saucepan.
  2. Cook over medium heat until the sugar dissolves and boils, stirring occasionally, then turn off the stove.
  3. Strain the palm sugar syrup.
  4. In a saucepan, add 300 g half mature grated coconut, the pandan leaves, and the strained palm sugar syrup.
  5. Cook over medium heat, stirring constantly, until the syrup is absorbed and the mixture feels dry, then let the coconut filling cool.
  6. For the serving cups, fold two banana leaves in half and cut them into squares of about 12x15 cm.
  7. Tuck the leaf into shape, snip the centre slightly, then fasten it with a stapler, a satay skewer, or a thin stick.
  8. For the dough, put 300 g white glutinous rice flour, 20 g rice flour, 1/2 tsp salt, and 100 g steamed mashed potato into a bowl.
  9. Add 150 ml pandan juice, 130 ml instant coconut milk, and 1/2 tsp pandan paste.
  10. Stir, then knead by hand until evenly combined and the dough is smooth and no longer sticks to the bowl.
  11. Roll the coconut filling into balls of about 1 tsp each, grease your hands with a little cooking oil, then take about 1 tbsp of dough.
  12. Flatten the dough, place the coconut filling in the centre, wrap it up tightly, then roll it into a smooth ball; repeat until all the dough is filled.
  13. Bring water to a boil in a pot, add 1 tbsp cooking oil, then drop in the filled dough balls.
  14. Boil until all the cakes float, or steam them for about 15 minutes over medium heat.
  15. Lift the cakes out of the pot and immediately soak them in room temperature water for about 2 minutes to stop the cooking, then drain.
  16. For the coconut sauce, put 30 g rice flour, 1 tsp granulated sugar, 3/4 tsp salt, and 700 ml medium thick coconut milk into a saucepan, then stir until smooth, slick, and lump free.
  17. Add 2 pandan leaves, then cook over medium heat until boiling and thickened while stirring constantly.
  18. Once it boils, thickens, and bubbles, turn off the heat and keep stirring until the steam is gone, then leave it to cool.
  19. Spoon the cooled coconut sauce into a serving cup, then place two to three cakes on top.
