Ingredients

Topping:

Steps

  1. Put 500 g high-protein bread flour, 60 g granulated sugar, 40 g milk powder, 1/2 tsp baking powder, 1/2 tsp bread improver and 2 tsp instant yeast into a mixing bowl.
  2. Mix briefly on low speed until the dry ingredients are evenly combined.
  3. Add 2 egg yolks, about 40 g, and 260 ml cold milk, then mix on medium speed until the dough is half smooth.
  4. Add 1 tsp salt and 60 g margarine, then keep mixing for about 20 minutes until the dough is smooth and elastic.
  5. Test the dough by stretching a small piece; if it can be stretched thin and translucent without tearing easily, it is properly developed.
  6. Shape the dough into a ball, then brush the surface with a little cooking oil so it does not dry out and form a skin.
  7. Divide the dough into 24 equal portions of about 40 g each, then roll each into a smooth, tight ball.
  8. Lay the balls out in order on a tray dusted thinly with flour.
  9. Cover the dough with plastic and rest it for about 15 to 20 minutes.
  10. Press each ball gently with a jar lid or your fingers dipped in flour to push out the air inside.
  11. Make a hole in the centre of each one, and repeat until all the doughnuts are shaped.
  12. Cover the dough with plastic again and leave it for about 40 to 60 minutes until doubled in size.
  13. Touch test the dough; if it springs back when pressed and feels light when lifted, it is ready to fry.
  14. Heat the oil until it is properly hot over the lowest heat, then add a batch of doughnuts.
  15. Fry until the underside is golden brown, then turn them just once so they do not absorb much oil, and keep frying until both sides are golden brown.
  16. Lift the doughnuts out of the oil and drain off the excess, then fry the remaining dough the same way.
  17. Let the doughnuts cool, then coat them in icing sugar, or icing sugar mixed with milk powder to taste.
  18. Store the doughnuts in an airtight container so they stay soft and fluffy.
