Steps

  1. In a bowl, add 400 g high protein wheat flour, 100 g medium protein wheat flour, 75 g powdered sugar, 10 g milk powder, 2 tsp instant yeast, 2 egg yolks, 1 egg, 1/2 tsp vanilla, and 225 ml cold liquid milk.
  2. Mix the dough on medium speed until half smooth.
  3. Add 100 g margarine and 1 tsp salt, then keep mixing for about 15 minutes until the dough is smooth and elastic.
  4. Take a little dough and stretch it out; if it does not tear easily and turns transparent, the dough is smooth and elastic.
  5. Round the dough, then divide it into equal portions of about 50 g each.
  6. Round each portion until smooth and line them up in the order they were rounded; cover the waiting dough with a clean cloth or plastic so it stays moist.
  7. Take one portion and roll it out, lay a chopstick or a satay skewer on top, then roll the dough up around it and press it firm.
  8. Seal and press the join tightly so it does not come apart during frying.
  9. Place the shaped doughnuts on a floured surface, cover them with a clean cloth, then leave them until doubled in size, about 40 to 60 minutes.
  10. Heat oil over low heat, add a few pieces at a time, then fry over low heat until both sides are golden brown; flip only once so the doughnuts do not soak up much oil.
  11. Once both sides are golden brown, lift the doughnuts out and drain them, then fry the rest and leave them until cool.
  12. For the buttercream, put 250 g white margarine and 50 g powdered sugar into a bowl, then beat on maximum speed for about 20 minutes until fluffy and soft.
  13. Add 100 g sweetened condensed milk and 1 tsp vanilla, then beat briefly until evenly combined.
  14. Once the doughnuts are cool, coat them all over with the cream.
  15. Roll the doughnuts in chocolate sprinkles, then serve.
