Ingredients

Vanilla Vla Ingredients:

Steps

  1. Put 50 g of cornstarch, a quarter teaspoon of salt, 100 g of granulated sugar, one egg yolk, 500 ml of liquid milk, and 1 teaspoon of vanilla into a pot, then stir until evenly combined.
  2. Cook over medium heat, stirring constantly, until it boils, thickens, and turns glossy, then turn off the heat.
  3. Add 20 g of margarine, then keep stirring until the margarine melts and is mixed through.
  4. Cover the custard then leave it until cool so it does not form a skin.
  5. Put 500 g of high-protein wheat flour, 30 g of milk powder, 75 g of granulated sugar, 2 teaspoons of instant yeast, 4 egg yolks, and 225 ml of cold liquid milk into a bowl.
  6. Mix on medium speed until the dough is evenly combined.
  7. Add 1 teaspoon of salt and 75 g of margarine, then keep mixing until the dough is smooth and elastic.
  8. Check it by taking a small piece of dough and stretching it out; if it does not tear easily and looks translucent, it is ready.
  9. Roll the dough into a ball.
  10. Divide the dough into portions of about 40 g each, roll each into a smooth ball, then cover them with plastic or a clean cloth so they stay moist.
  11. Once all are rolled, cover the dough with a clean cloth then rest it for about 20 minutes.
  12. Dust the doughnut cutter and the dough with flour so they do not stick, flatten each piece thin, then lay them on non-stick paper.
  13. Score the centre of each doughnut with a cookie cutter, pressing gently but fairly deep so the shape shows once fried.
  14. Cover the dough then leave it about 60 minutes until it doubles in size.
  15. Heat oil over low heat, lower in a batch of dough, then fry over low heat until both sides are golden, turning only once so they do not soak up oil.
  16. Lift the doughnuts out and drain them, then carry on frying the rest.
  17. Once the doughnuts are cool, press the centre in a little.
  18. Pipe custard into the hollow to taste.
  19. Arrange pieces of fruit on top to taste.
