Ingredients

Coating Ingredients:

Steps

  1. Boil 500 g shaved palm sugar with 2 pandan leaves and 500 ml water over medium heat until it boils and the sugar dissolves, stirring occasionally.
  2. Turn off the heat and let the syrup cool down, or at least until it is only warm.
  3. Mix 500 g tapioca starch, 1 tsp salt, and 1/4 tsp vanilla powder in a bowl.
  4. Strain the cooled palm sugar syrup into the flour mixture, add 700 ml medium-thick coconut milk, then stir until the batter is smooth, silky, and lump free.
  5. Add 1 tbsp cooking oil, stir again until evenly combined, and strain the batter if any lumps remain.
  6. Grease the molds thinly with cooking oil, then pour in batter to fill them halfway.
  7. Steam about 10 minutes over medium heat in a steamer with already boiling water, lining a flat steamer lid with a clean cloth.
  8. Uncover the steamer and pour in the rest of the batter to fill the molds.
  9. Continue steaming about 30 minutes until the surface has set and the cakes are cooked.
  10. Mix 200 g of the white part of medium-aged grated coconut with 1/2 tsp salt and 1 pandan leaf, then steam it about 5 minutes over medium heat.
  11. Once the cakes are completely cool, loosen them from the molds and turn them out.
  12. Coat the cakes in the grated coconut and serve.
