Otak-Otak Ingredients:

Chili Sauce Ingredients:

Steps

  1. Put 400 gr of washed chicken into the chopper. If you do not have a chopper, the chicken can be ground with a mortar or a blender.
  2. Add 1 egg, 4 stalks of spring onion using only the white part, 5 cloves of garlic finely sliced, 1 tsp granulated sugar, 1 tsp ground pepper, 1 tsp salt, 1 tsp powdered broth, 1/2 tsp baking powder, 40 gr all-purpose flour, 80 gr tapioca starch, 5 tbsp coconut milk, and 1 1/2 tbsp sesame oil.
  3. Grind the mixture until smooth and evenly combined.
  4. Add 4 stalks of finely sliced spring onion using only the green part, then stir until evenly combined.
  5. Transfer the mixture into a piping bag.
  6. Heat oil in a pot, then pipe the mixture onto a bamboo skewer until it is covered.
  7. Lower a few skewers at a time into the heated oil.
  8. Fry over medium to low heat so the inside cooks through evenly and does not scorch.
  9. Once the otak-otak start to float, turn them over so the inside cooks evenly.
  10. Once they are golden yellow, lift them out and drain off the oil, then continue frying the rest of the mixture.
  11. Grind 4 cloves of garlic, 5 bird's eye chilies, and 10 red chilies. If you do not like it spicy, you can reduce the bird's eye chilies.
  12. Add a little water so it grinds more easily; the total water used is 250 ml.
  13. Dissolve 1 tbsp cornstarch in 50 ml water and stir until evenly combined.
  14. Set a pot on the stove and add the ground chilies, 1 tsp salt, 3 tbsp granulated sugar, the dissolved cornstarch, the remaining water, and 1 tbsp vinegar.
  15. Cook over medium heat until it boils and thickens, stirring constantly so the bottom does not scorch.
  16. Once it boils and bubbles up, turn off the heat, then serve the otak-otak with the chili sauce.
