Ingredients

Steps

  1. Put 300 g of shaved palm sugar, one pandan leaf, a quarter teaspoon of salt, and 200 ml of water into a pot.
  2. Cook over medium heat, stirring now and then, until the sugar dissolves and the liquid boils, then turn off the heat.
  3. Strain the palm sugar syrup, then leave it until cool.
  4. Snip 8 pandan leaves small, blend them with 500 ml of water, then strain the pandan juice.
  5. Put 200 g of the white part of grated coconut and a quarter teaspoon of salt into a bowl, then stir until evenly combined.
  6. Add one pandan leaf so the coconut is fragrant, then steam for about 5 to 10 minutes over medium heat so the grated coconut does not spoil quickly.
  7. Take the coconut out of the steamer, then leave it until cool.
  8. Put 75 g of rice flour and 200 ml of the pandan juice into a pot, then stir until the mixture is smooth and slippery with no lumps of flour.
  9. Cook over medium-low heat, stirring constantly, until the liquid reduces and the dough comes together, then turn off the heat.
  10. Move the dough to another bowl, then while it is still hot add 450 g of glutinous rice flour and a quarter teaspoon of salt.
  11. Pour in the rest of the pandan juice a little at a time along with half a teaspoon of pandan paste, then stir until the dough comes together and is evenly combined.
  12. Knead the dough until it no longer sticks to your hands or the bowl.
  13. Take about 1 tablespoon of dough, about 15 g, roll it into a ball, make a hollow in the middle, then shape it into an oval.
  14. Spoon in enough palm sugar syrup, close the dough over it, seal the ends well, then repeat until all the dough is used.
  15. Heat water in a pot, add a teaspoon of cooking oil and one pandan leaf, then drop in a batch of the dumplings.
  16. Cook over medium heat until they all float to the surface, then lift them out and drain them.
  17. Roll the dumplings in the cooled grated coconut.
