Cake Ingredients:

Steps

  1. Cut 10 pandan leaves into small pieces, blend them with 500 ml of water until smooth, then strain the pandan juice.
  2. For the coating, mix 200 gr of grated half-mature coconut, white part only, with half a teaspoon of salt and 2 pandan leaves.
  3. Steam the grated coconut for about 5 minutes so it does not spoil quickly, then take it out and let it cool.
  4. In a pot, put 75 gr of rice flour and about 200 ml of the pandan juice, then stir until smooth, silky, and free of lumps.
  5. Cook over medium heat while stirring constantly until the mixture thickens, then turn off the heat.
  6. While it is still hot, transfer the mixture to another bowl, then add 450 gr of white glutinous rice flour, a quarter teaspoon of salt, the remaining pandan juice, and half a teaspoon of pandan paste.
  7. Stir until well combined, then knead by hand until the dough is smooth and no longer sticks to your hands.
  8. Take about 25 gr of dough for each piece, roll it, then make a hole in the middle.
  9. Fill it with about 5 gr of palm sugar that has been shaved and rolled into a ball, seal it, then roll the dough until smooth. Repeat until all the dough is used up.
  10. Heat water in a pot, add 2 tablespoons of cooking oil and 1 pandan leaf, then bring it to a boil.
  11. Put the filled cakes into the boiling water and boil over medium heat until they all float to the surface.
  12. Once all the cakes float, lift them out and drain them.
  13. Roll the cakes in the cooled grated coconut, then serve.
