Ingredients

Steps

  1. For the glutinous rice wajik, wash 500 g glutinous rice then soak it for about 3 hours so it softens quickly when cooked.
  2. Toast 3 grated coconuts, about 750 g, using only the white part, over medium low heat while stirring constantly until it separates and no longer feels wet in your hand, then turn off the stove.
  3. After about 3 hours of soaking, drain the glutinous rice.
  4. Put the rice into a wok, then add 700 ml water until all the rice is covered.
  5. Cover the wok, then cook over medium heat for about 8 minutes until the water has reduced, stir the rice then turn off the stove.
  6. Move the rice into a tin or steamer, then add 1 pandan leaf.
  7. Steam for about 20 minutes or until the rice is soft.
  8. Prepare a pan, add 1 kg granulated sugar, the steamed rice, 1/2 tsp vanilla powder, and 1 tsp salt.
  9. Cook over medium heat, stirring constantly, until the sugar dissolves, boils, and thickens.
  10. Once it is boiling and thick, add the toasted grated coconut.
  11. Keep cooking over medium low heat, stirring constantly, for about 1 hour until the mixture feels heavy and no longer sticks to your hand.
  12. Add 2 packets of plain white agar-agar powder, then cook briefly over low heat while stirring until evenly combined and the rice looks glossy, then turn off the stove.
  13. Let it stand briefly until just warm.
  14. Take about 20 g of wajik, wrap it in a 10 x 10 cm piece of greaseproof paper, then seal it tightly.
  15. For the mung bean wajik, wash 500 g mung beans then soak them for about 1 hour.
  16. Toast 750 g grated coconut, using only the white part, over medium heat while stirring constantly for about 10 minutes until it separates or is half dry, then turn off the stove.
  17. After about 1 hour of soaking, drain the mung beans.
  18. Put the mung beans into a pot of boiling water, then add 1 pandan leaf.
  19. Cover the pot, boil for about 5 minutes over medium heat, turn off the stove, then leave the mung beans for about 30 minutes with the pot still covered.
  20. After about 30 minutes, keep boiling for about 5 to 7 minutes until all the mung beans have split open, then lift them out and drain.
  21. Prepare a wok, add 1 kg granulated sugar, 1 tsp salt, 1/2 tsp vanilla powder, and the drained mung beans.
  22. Cook over medium heat, stirring constantly, until the sugar dissolves, boils, and thickens.
  23. Once it is boiling and thick, add 2 packets of plain white agar-agar powder, then stir until evenly combined.
  24. Add the toasted grated coconut.
  25. Keep cooking over medium low heat, stirring constantly, until it is dry and the mixture feels heavy and comes away cleanly, then turn off the stove.
  26. Once the wajik is just warm, weigh out about 20 g portions, then wrap them in 10 x 10 cm pieces of greaseproof paper and seal them tightly.
