Ingredients

Steps

  1. Wash 500 g mung beans, soak them for about 1 hour, then set aside.
  2. In a wok, add 750 g half mature grated coconut, using only the white part.
  3. Toast the coconut over medium heat, stirring constantly, for about 10 minutes until it becomes loose and half dry, then turn off the stove.
  4. After the 1 hour soak, drain the mung beans.
  5. Bring water to a boil in a pot, add the mung beans and 1 pandan leaf, cover the pot, then boil for about 5 minutes over medium heat.
  6. Turn off the heat and leave the mung beans for about 30 minutes with the pot still covered.
  7. Turn the medium heat back on and boil for another 5 to 7 minutes until all the beans have burst, then lift them out and drain.
  8. In a wok, add 1 kg granulated sugar, 1 tsp salt, 1/2 tsp vanilla powder, and the drained mung beans.
  9. Cook over medium heat, stirring constantly, until the sugar dissolves, boils, and thickens.
  10. Once it boils and thickens, add 2 packets of white agar powder and stir until evenly combined.
  11. Add the toasted grated coconut.
  12. Keep cooking over medium low heat, stirring constantly, until dry and the mixture feels heavy and stiff to stir, then turn off the stove.
  13. While the wajik is still warm, weigh out portions of about 20 g and wrap each in a 10x10 cm piece of greaseproof paper.
  14. Bring the two sides of the paper together, seal and press them tight so the wajik is wrapped airtight and keeps for up to 1 month.
