Open offline saves

Ingredients

Steps

  1. Wash 500 g glutinous rice, then soak it for about 3 hours so it softens quickly when cooked.
  2. In a pan put 3 grated coconuts, using only the white part, weighing about 750 g.
  3. Toast the coconut over medium low heat, stirring constantly, until it separates and no longer feels wet in your hand.
  4. After about 8 minutes of toasting, turn off the stove.
  5. After about 3 hours of soaking, drain the glutinous rice.
  6. Put the drained glutinous rice into a wok.
  7. Add 700 ml water, or enough to cover all the rice by about half a finger joint above the surface.
  8. Cover the pan, then cook over medium heat until the water has reduced.
  9. After about 8 minutes of cooking, once the water has reduced, stir the rice then turn off the stove.
  10. Move the rice into a tin or straight into the steamer.
  11. Add 1 pandan leaf so the rice smells fragrant.
  12. Steam for about 20 minutes or until the rice is soft.
  13. After about 20 minutes of steaming, touch or taste the rice, if it feels soft it is done.
  14. Prepare a pan, add 1 kg granulated sugar, then add the steamed glutinous rice.
  15. Add 1/2 tsp vanilla powder and 1 tsp salt.
  16. Cook over medium heat, stirring constantly, until the sugar dissolves, boils, and thickens.
  17. Once the mixture is boiling and thick, add the toasted grated coconut.
  18. Keep cooking over medium low heat, stirring constantly, until the liquid has reduced and the mixture feels heavy and no longer sticks to your hand.
  19. After about 1 hour of cooking, the mixture comes away cleanly and no longer sticks to the spatula, which means it is done.
  20. Add 2 packets of plain white agar-agar powder so the rice stays soft and rich even once it dries.
  21. Keep cooking briefly over low heat, stirring constantly, until the agar-agar powder is evenly mixed in and the rice looks glossy.
  22. Turn off the stove, then let it stand briefly until just warm.
  23. Take about 20 g of wajik, then wrap it in a 10 x 10 cm piece of greaseproof paper.
  24. Bring the two ends together, then press and seal the left and right sides tightly so it keeps well and does not go mouldy.
