Ingredients

Steps

  1. Put the glutinous rice that has been washed clean, soaked for at least three hours, and drained into a tin along with one pandan leaf.
  2. Steam in a steamer with already boiling water for about 15 minutes over medium heat, with the steamer lid wrapped in a clean cloth so condensation does not drip into the rice.
  3. Put the thick coconut milk, salt, and pandan leaf into a pot, then cook over medium heat while stirring constantly until it boils, then turn off the heat.
  4. Once the rice is half cooked, take the tin out of the steamer.
  5. Pour the boiled coconut milk over the rice, then stir until it is absorbed and evenly combined.
  6. Return the tin to the steamer, then steam for about 20 minutes or until the rice is cooked and soft, then take it out.
  7. Put the palm sugar cut into small pieces, granulated sugar, salt, thick coconut milk, and pandan leaves into a pot.
  8. Cook over medium heat while stirring constantly so the coconut milk does not split, until the palm sugar has dissolved, then turn off the heat without waiting for it to boil.
  9. Strain the palm sugar syrup to remove the residue, then pour it into a larger wok.
  10. Return the pandan leaves, then cook over medium heat while stirring constantly until it boils.
  11. Lower the heat, then add the cooked glutinous rice.
  12. Cook over low heat while stirring constantly until the palm sugar syrup is absorbed into the rice and the mixture is fairly dry, then turn off the heat.
  13. Grease a 20 x 20 cm tin with a thin layer of cooking oil, then line it with plastic.
  14. Spoon the rice into the tin, then press it down and level it.
  15. Cover the surface with plastic, then leave it until cold.
  16. Turn the wajik out of the tin, then cut it as you like.
