Sticky Rice Ingredients:

Palm Sugar Layer Ingredients:

Steps

  1. Wash 500 g of glutinous rice clean, soak it for about 4 hours, then drain it.
  2. Put the rice into a tin greased with cooking oil and lined with baking paper.
  3. Mix 500 ml of medium-thick coconut milk with 2 tablespoons of cooking oil and 1 teaspoon of salt, then stir until evenly combined.
  4. Pour the coconut milk mixture into the tin, then level it so the rice is submerged.
  5. Lay pieces of pandan leaf on top so the rice is more fragrant.
  6. Put the tin into a steamer that is already boiling, then steam for about 30 minutes until the rice is cooked and soft.
  7. Lift the tin out of the steamer, then take out the pandan leaves.
  8. Stir the rice, then level and press it down firmly so the next layer does not seep into the rice.
  9. Put 200 g of shaved palm sugar, 250 ml of water, and 1 pandan leaf into a pot, cook until the sugar dissolves and the liquid boils, then turn off the heat.
  10. Put 75 g of wheat flour, 20 g of cornstarch, half a teaspoon of salt, half a teaspoon of vanilla powder, 2 eggs, and 250 ml of medium-thick coconut milk into a bowl.
  11. Stir until the mixture is smooth and slippery with no lumps.
  12. Add the palm sugar syrup, then keep stirring until evenly combined.
  13. Strain the mixture to make sure there are no lumps.
  14. Cook over medium-low heat, stirring constantly, until it starts to steam and the base begins to thicken into clumps, then turn off the heat.
  15. Pour the mixture into the tin, then level it with a spoon or spatula.
  16. Steam for about 45 minutes over medium-low heat until the cake is done.
  17. Lift the tin out of the steamer, then leave the cake to cool for about 3 or 4 hours.
  18. Run a knife around the edge of the tin, turn the cake out, then slice and serve.
