Ingredients

Cilok Ingredients:

Peanut sauce ingredients:

Steps

  1. Put 300 g all-purpose flour, 1 tsp salt, 1/2 tsp ground pepper, 2 tsp bouillon powder, 7 ground cloves of garlic, and 520 ml water into a pot, then stir until evenly combined.
  2. Add 2 finely sliced spring onions, then cook over medium heat, stirring constantly, until the dough comes together, and turn off the heat.
  3. Transfer the dough to another bowl, add 300 g tapioca starch while the dough is still hot, then stir with a wooden spoon or spatula until it comes together.
  4. Once the dough is only warm, knead it by hand until smooth and no longer sticking to the bowl.
  5. Take about 12 g of dough and roll it into a smooth ball; you can also stuff it with a boiled quail egg.
  6. Heat water in a pot, add 2 tbsp cooking oil so the balls do not stick together, then once the water boils add a batch of cilok.
  7. Boil over medium heat, stirring occasionally, until all the balls float, then lift them out and drain.
  8. For the peanut sauce, fry 250 g peanuts in hot oil over medium heat, turning them, until golden, then lift out and drain.
  9. Grind the peanuts while still hot together with 150 g steamed potato until smooth and evenly combined.
  10. Grind 25 red chilies, 8 shallots, 20 bird's eye chilies, and 8 cloves of garlic with a little cooking oil until smooth and evenly combined.
  11. Heat a little oil in a pot, add the spice paste and 5 kaffir lime leaves, then fry over medium heat, stirring occasionally, until fragrant.
  12. Add the peanut and potato mixture along with about 500 ml water, stir well, then cook until it boils and the oil separates out.
  13. Add 100 g palm sugar, 3 tbsp granulated sugar, 1 tsp salt, 1/2 tsp bouillon powder, 2 tsp tamarind solution, and 110 g sweet soy sauce, stir well, then keep cooking until it boils and thickens.
  14. Taste and adjust the seasoning, turn off the heat, and serve the cilok warm with the peanut sauce poured over.
