Steps

  1. Prepare a pot for cooking and add 260 ml of water.
  2. Add 3 crushed cloves of garlic and 1/2 tbsp of dried shrimp that has been dry-roasted and ground.
  3. Add 1/4 tsp of granulated sugar, 1/2 tsp of ground pepper, 1 tsp of salt, and 1/4 tsp of powdered broth, then stir until evenly combined.
  4. Cook until it boils, then turn off the heat and set it aside.
  5. Prepare a bowl and add 150 gr of tapioca flour and 150 gr of wheat flour.
  6. Add 2 stalks of finely chopped celery leaf then stir until evenly combined.
  7. Add the seasoned hot water a little at a time while stirring with a spoon until the dough can be shaped.
  8. Continue mixing by hand until the dough can be shaped and rolled.
  9. If the dough is still too soft and sticky, add wheat flour a little at a time then knead again until evenly combined.
  10. Oil your hands lightly, then take a little dough and roll it into a small ball, since the cilok will swell when boiled.
  11. Repeat until all the dough has been shaped.
  12. Heat water in a pot, add 2 tbsp of cooking oil, and bring it to a boil.
  13. Once the water boils, add the rolled cilok and cook until the balls float.
  14. Once the cilok balls float, lift them out and drain them.
  15. Steam the cilok balls for about 10 minutes so they are fully cooked, then set them aside.
  16. For the peanut sauce, heat a little oil in a wok, add 3 crushed cloves of garlic, and fry until fragrant.
  17. Add 5 red chilies that have been boiled and ground, then stir-fry again until evenly combined.
  18. Add 50 gr of peanuts that have been dry-roasted and ground, then stir until evenly combined.
  19. Add 400 ml of water then cook until it boils over medium heat, stirring constantly so the bottom does not scorch.
  20. Once it boils, add 100 gr of steamed and mashed potato, then stir until evenly combined.
  21. Add 1 tsp of powdered broth, 1 tsp of salt, and 1 tsp of granulated sugar, then stir until evenly combined.
  22. Add 50 gr of finely sliced palm sugar and 100 gr of chilli sauce, using less if you do not like it too spicy.
  23. Add 50 gr of sweet soy sauce then cook until it boils, stirring until evenly combined.
  24. Dissolve 2 tbsp of rice flour in a little water and stir until evenly combined.
  25. Add the rice flour slurry into the wok then cook until it boils again and thickens, stirring constantly so the bottom does not scorch.
  26. Once it boils, taste and add more salt or sugar if needed, then turn off the heat.
  27. Put the cilok on a plate, pour over as much peanut sauce as you like, and serve while warm.
