  1. Cut 600 g of chicken wings into two pieces each.
  2. Finely chop 2 cloves of garlic and 2 cm of ginger.
  3. Add them to the chicken together with half a teaspoon of salt and pepper, then mix until evenly coated.
  4. Wings do not need a long marinade because the meat is thin, but if you use breast or thigh marinate them for at least one hour or overnight.
  5. Coat the chicken with 80 g of cornstarch, using just enough so the skin stays thin and crisp.
  6. Heat the oil over medium heat and fry the chicken only until it is lightly golden, because it will be fried twice.
  7. Lift the chicken out.
  8. Reheat the oil over high heat and wait until the bubbles subside.
  9. Return the chicken and fry it until golden brown.
  10. Lift it out and drain off the oil.
  11. For the sauce mix 4 tbsp of gochujang, one and a half tablespoons of sugar and 5 tbsp of tomato sauce.
  12. Add 1 tbsp of cornstarch and 1 tsp of pepper.
  13. Add 2 tbsp of honey, 2 tbsp of rice vinegar and 50 ml of water, then stir everything together except the garlic.
  14. Finely chop 2 cloves of garlic.
  15. Heat about 2 tbsp of oil in a pan.
  16. Add the garlic and fry until fragrant, without letting it brown too much.
  17. Pour in the sauce and stir until it is combined and slightly thickened.
  18. Once the sauce has the right consistency, add the chicken and toss briefly, then turn off the heat so the crust stays crisp.
  19. Sprinkle sesame seeds on top.
