  1. For the spice paste, cut 7 red curly chillies in half so they blend more easily, and add bird's eye chillies if you want it spicier.
  2. Add 10 shallots.
  3. Add 6 cloves of garlic.
  4. Add 1 tsp of shrimp paste that has been toasted so its aroma comes out more.
  5. Add 30 g of turmeric, or about one and a half medium sized pieces.
  6. Add vegetable oil to make blending easier, then blend all the spices into a paste.
  7. Heat a wok, then saute the spice paste without adding more oil since the paste already has oil in it.
  8. Saute until the paste smells fragrant.
  9. Add 2 stalks of bruised lemongrass.
  10. Add 40 g of bruised galangal so its aroma comes out more.
  11. Saute until all the spices are cooked through.
  12. Once the paste is cooked and fragrant, add about 700 g of cut pork ribs.
  13. Stir fry for about three minutes until the meat changes colour and the spices coat every part of the ribs.
  14. Add 1.2 litres of water.
  15. Cover the wok, then cook until the ribs are tender.
  16. Once the ribs are turning tender, add 200 g of cut baby corn.
  17. Add about 6 tbsp of tamarind water.
  18. Season with 3 tsp sugar and 1 1/2 tsp salt.
  19. Add 1/2 tsp pepper and 1/2 tsp mushroom stock powder.
  20. Stir briefly until the corn and the seasoning are evenly combined.
  21. Cover the wok, then cook until the corn is done but not for too long so it keeps some texture, then serve.
