  1. Prepare 1 kg of pork belly, and if you can, choose a piece with three clear layers of meat and fat.
  2. Bring enough water to a boil in a pot, then add the pork belly with the skin facing down.
  3. Cover the pot, then cook over low or medium heat for 30 minutes.
  4. Lift out the pork belly and set it aside.
  5. Prick the skin with a fork as many times as you can.
  6. Dry the skin with kitchen paper or a kitchen cloth.
  7. Rub the whole skin and the meat side with 2 tbsp of Hati Angsa brand soy sauce.
  8. Put the pork belly in the fridge uncovered for 3 hours until the skin is really dry.
  9. Heat plenty of vegetable oil in a nonstick wok.
  10. Fry the pork belly with the skin facing down and cover the wok so the oil does not spit, then fry for 20 to 30 minutes over low heat.
  11. Turn the pork belly over and fry the other side for just 5 minutes.
  12. Soak the pork belly in ice water for 2 hours until the skin softens.
  13. Slice 800 g of wet pickled mustard greens, and you can also use the dried kind if you prefer.
  14. Wash and drain 2 tbsp of fermented soybean paste, then pound it smooth and set it aside.
  15. Prepare 200 g shallots, 25 g aromatic ginger, and 100 g garlic.
  16. Pour in enough vegetable oil to make blending easier, then grind all the aromatics into a paste.
  17. Heat a wok, add about 3 to 4 tbsp vegetable oil, then saute the spice paste until fragrant while stirring constantly because it burns easily.
  18. Add the pounded soybean paste, then saute until fragrant.
  19. Add about 3 tbsp sweet soy sauce.
  20. Add 2 tbsp of thick salty soy sauce.
  21. Add 50 g palm sugar, 1 tsp ground white pepper, and 1 tbsp mushroom stock powder, which is optional.
  22. Pour in about 100 ml of water, stir briefly, then turn off the heat.
  23. Move the seasoning paste into another container and leave a little of it in the wok.
  24. Add the sliced pickled mustard greens and stir fry for about 2 minutes until they are well coated in the seasoning, then turn off the heat.
  25. Slice the soaked pork belly into pieces about 1 cm wide or however you like.
  26. Toss the sliced pork belly with about 5 tbsp of the seasoning paste you cooked earlier.
  27. Arrange the pork belly slices neatly in the bottom of a heatproof bowl.
  28. Add about 1 to 2 tbsp of the seasoning on top of the arranged pork belly.
  29. Pack the stir fried pickled mustard greens on top until the bowl is full, then add a little more seasoning, and 1 kg of meat will fill 2 steaming bowls.
  30. Put it into the steamer and steam for one and a half to 2 hours until the pork belly is really tender.
